Senbei-jiru is a traditional local dish enjoyed mainly in Hachinohe, southern Aomori Prefecture, and northern Iwate Prefecture. It is a hearty soup made with chicken-based broth and seasonal vegetables, featuring firm Senbei (rice crackers) that soak up the rich flavor of the soup.

The softened crackers become especially delicious, making this comforting dish both satisfying and filling. Many restaurants in Hachinohe offer their own creative variations of senbei-jiru and Senbei (rice cracker) dishes, so be sure to try one while enjoying the Enburi Festival.
